Garden Salad Table
We use the freshest produce available to create a beautiful display of everything that makes a salad perfect…assorted baby field greens, and other lettuces, a colorful selection of tomatoes, carrots, cucumbers, sprouts and a myriad of other garden veggies all to be dressed with a variety of toppings including crumbled Vermont cheeses, spiced pecans, caramelized onions, toasted brie croutons, and crostini and an assortment of handmade dressings.

Carving Station
Carved to order and served with varied condiments and rustic breads. Options include:
• Beef tenderloin with au jus
• Roast beef with beef gravy
• Hickory smoked ham with maple glaze
• Smoked turkey breast with traditional gravy
• Roasted pork loin with apple cider sauce
• Whole boneless poached salmon with dill cream sauce
• Roasted leg of lamb with rosemary, garlic sauce
Condiments may include: marscapone, grainy, Dijon & honey mustards, mayo & cranberry mayo, caramelized onions, frizzled leeks and roasted garlic

Asian Station
Versatile, beautiful, colorful…mix and match items for this display including:
• Budapest salad (spicy beef) in mini take out containers with chop sticks
• vegetable lomein in mini take out containers with chop sticks
• assorted dumplings*
• crab rangoon
• assorted sushi*
• maguro art–ahi tuna topped wontons*

Dim Sum Station
Assorted dumplings and spring rolls

Mashed Potato
Bar Whipped Idaho, Sweet Potato or Red Bliss Potatoes served with assorted toppings: roasted garlic, bacon, steamed broccoli, frizzled leeks, beef gravy, caramelized onions, maple syrup, candied pecans, crumbled cheeses, sour cream & fresh scallions

Pasta Bar
Choice of three cheese ravioli, butternut squash ravioli, linguine, bowties or penne with sauces and options for our chefs to create a signature dish just for you: fresh tomato basil marinara sauce, garlic cream sauce, garden pesto sauce, pecorino romano & asiago cheeses, toasted pine nuts, wild mushroom & herb sauté, caramelized onions, shallots and whole roasted garlic. Additions: grilled chicken, shrimp or grilled flank steak

Cheese Fondu
Station Vermont cheese fondu with toasted bread, fruits, veggies & seats for dipping

Raw Bar
The Spice of Life raw bar includes the freshest and highest quality seafood: New England littlenecks and seasonal oysters shucked to order, scallops seviche, jumbo shrimp and Maine crab claws with lemon wedges, chili horseradish sauce, shallot mignonette and fresh horseradish.
Seasonal options may include:

Dress your own sirloin or veggie burger with assorted toppings including cheddar, American, crumbled bleu or crumbled chèvre cheeses; bacon; caramelized onions; guacamole; sautèed mushrooms; jalapenos; frizzled leeks, onion, tomato, lettuce and all the condiments

Nacho Bar
Tortilla Chips with all the fixings: cheese sauce, fresh guacamole, sour cream, homemade salsa, bean dip, shredded chicken and/or beef, chili, olives & jalapenos

Fajita Station
Grilled chicken & beef strips & red snapper with sautèed red & green peppers and caramelized onions, served with spanish rice, salsa, guacamole, sour cream, grated cheddar and pepper jack cheeses, diced tomatoes, sliced black olives, lettuce, chopped scallions and warm flour tortillas

Jerk Shack
Reminisce with warm Caribbean flavors & interactive island cuisine including: rice & beans to be topped with jerk pork, jerk chicken, spiced pork or carrot-ginger stuffed plantain fritters; mussels & Taylor Bay scallops in citrus; Jamaican meat patties, fruit kabobs, jerk sauce, homemade plantain chips for tropical fruit salsa; apricot mustard sauce & sweet island sauce. “Green” service option—can be served in coconut shell bowls with bamboo utensils. Additional options: smoked suckling pig, coconut shrimp, crab claws

Paella
A Spanish specialty, our Paella features Spanish rice, jumbo shrimp, calamari, red snapper, mussels, clams, chicken, chorizo sausage, figs, apricots, crisp veggies, & sweet spicy paella sauce–prepared onsite on our paella cart Bread Station Assorted Vermont-made breads including hearty pecan cranberry, olive, ciabatta, baguette and five grain loaves and rolls served with whipped country, herbed and berry butters
